Tzatziki
(Serves 6 - 8)

Ingredients :

> 1 cucumber
> salt and freshly ground black pepper
> 2 cloves of garlic, crushed
> 1 X 500g tub of Greek yoghurt
> freshly chopped mint (optional)

Introduction :

Tzatziki is traditionally served with warm pitta bread or as a dip with cruditees. It is also an excellent accompaniment to rice dishes or as a cooling relish for hot and spicy dishes.

Method :

1. Coarsely grate the cucumber into a sieve, sprinkle with salt and leave to drain for half an hour or so.
2. Squeeze the cucumber in your hands to extract the excess liquid and mix in a bowl with the rest of the ingredients. Check the seasoning and serve chilled.
