Introduction :
Serve Hummus as a starter with warm pitta bread, as a dip for cruditees or with lamb - chops, steaks, leg or shoulder, roasted or grilled. For lunch or a picnic stuff some into pitta bread pockets with roasted vegetables.
If the finished Hummus is too thick, let it down with a little more water to the consistency you like.
Method :
1. Drain and rinse the chickpeas and put into a food processor.
2. Process the chickpeas adding a little water until you have a thick paste.
3. Add the tahini, garlic, lemon juice, olive oil, cumin, salt and pepper.
4. Process again and spoon into a bowl. Pour a glug of olive oil over the top and sprinkle with a little cayenne pepper.
