Fresh Pea Parma Ham & Feta Salad
(Serves 4 - 6)

Ingredients :

> 1lb/450g fresh unshelled peas
> 2 slices of Parma ham, halved lengthways & cut into thin batons
> 1 bunch of spring onions, sliced into rings
> 10 mint leaves, chopped
> 4oz/110g Feta cheese, the best you can afford
> 2 tbsp of French dressing made with plenty of Dijon mustard and some palm or brown sugar

Introduction :

Tender, sweet, freshly podded, minty, peas combined with chunks of salty feta cheese and a sweet dressing.

Delicious eaten as a salad or with lamb such as a rump or chops, either barbequed or roast.

Cooked frozen peas could be used instead.

Method :

1. Shell the peas and cook until just tender in boiling salted water. Drain and refresh under cold water. Dry on some kitchen towel and put into a mixing bowl.
2. Add the Parma ham, spring onions, mint and a little French dressing. Mix well together, check the seasoning and spoon into a serving dish.
3. Scatter the Feta cheese broken into chunks over the top and serve.
