Spicy Yellow Rice
(Serves 4 - 6)

Ingredients :

> 2tbsp vegetable oil
> 2 shallots, finely sliced
> 8oz/225g Basmati rice
> ¼ tsp ground cumin
> ¼ tsp black mustard seeds
> ½ tsp ground turmeric
> ½ tsp ground coriander
> 1 clove of garlic, crushed
> 16floz/450ml chicken stock
> a rounded ¼ tsp salt
> 1 Kaffir lime or bay leaf

Introduction :

Although this is a lovely accompaniment to endless dishes it is particularly good with the Monkfish Brochette recipe as in the photograph above. You will find the brochette recipe on the recipe page.

The rice can be cooked in advance and gently reheated when required.

Method :

1. Heat the oil and fry the shallots for a few minutes, until softened.
2. Add the rice, cumin, mustard seeds, turmeric, coriander and garlic and cook for another few minutes.
3. Add the stock, salt and lime or bay leaf, bring to the boil, stir once and cover with a tight fitting lid. Leave to barely simmer for 10 – 12 minutes, until all the liquid had been absorbed.
4. Remove from the heat; remove the lid and leave to stand with a tea towel over the top of the saucepan for 5 minutes.
5. Gently stir through with a wooden spoon and serve.
