Introduction :
Easy, delicious and perfect for a quick lunch or supper with a green or tomato salad.
Method :
1. Cook the shallots and garlic in one tablespoon of olive oil over a gentle heat for a few minutes, until soft but not coloured. Add the chilli, lime zest and lime juice.
2. Bring a large pan of salted water to the boil and cook the linguine according to the packet instructions.
3. Drain, reserving some of the cooking liquid in a cup. Add to the shallot mixture, with the chopped parsley, the crab and a little olive oil.
4. Stir gently to combine, adding some of the cooking liquid to loosen the sauce as necessary.
