Carpaccio of Salmon with Pink Peppercorns
(Serves 4)

Ingredients :

> 1lb/450g piece of fresh salmon
> pink peppercorns
> ½ a red onion, very finely sliced or chopped (optional)
> fresh dill, coriander, chervil or parsley
> juice of one lime or lemon
> sea salt and freshly ground black pepper
> olive oil

Introduction :

Pretty, fresh and healthy. This lovely starter is delicious served with toasted sourdough bread or griddled ciabatta bread rubbed with olive oil and sea salt.

Method :

1. Slice the salmon into very thin slices, as though you were slicing smoked salmon.

2. Arrange these slices on four medium sized plates making sure that the base of each plate is completely covered with salmon. Scatter over a few pink peppercorns, a little onion if using and tiny sprigs of whichever fresh herb you have chosen. This can be done several hours in advance, covered with cling film and chilled.

3. Just before serving, sprinkle a little lime or lemon juice over the salmon, followed by some sea salt and freshly ground black pepper.

4. Finally, with your thumb over the top of the bottle, drizzle over a circle or two of olive oil.

5. Serve immediately.
